Mangold/swiss chard/chard please!
August 23rd, 2007 @ 15:59ok, I know I asked for mangold recipes in my last post but what I meant was;
Does anyone have any good chard/swiss chard recipes to share? I bought some and I’ve never had it before. I need to know you favourites!

Comment by johanna3 - August 23rd, 2007 at 5:06 pmA really good and simple recipe is to de-stem the chard and chop the leaves. Then chop up the stems. Put a bit of olive oil in a pan and saute the stems with garlic. When soft, add the leaves, cover the pan and let cook down. Add salt and pepper to taste. Wrap up the chard in tortillas along with cooked basmati rice, soy sour cream, and hot salsa. I think I got this recipe from A Year in a Vegetarian Kitchen, but I can’t quite recall. It’s very good, though. It tastes much better than a mere sum of its parts.
Comment by Michelle - August 23rd, 2007 at 8:07 pmI would recommend something like: cook the chard w/ olive oil, chili pepper and garlic and plenty of salt and pepper (like Michelle describes, above) and then add some white beans like cannelini. It’s a classic, simple dish, and so good. You can keep most of the stalks, they are really tender and pretty, especially the red or orange or yellow, but the white ones too. I love some chard. MMMMMM

Here’s one we use sometimes too. (In fact, I should blog this myself!)
Chard and Quinoa
1 tablespoon olive oil
1 onion, diced
3 cloves garlic, minced
2 cups uncooked quinoa, rinsed
1 cup canned lentils, rinsed
8 ounces fresh mushrooms, chopped
1 quart vegetable broth
1 bunch Swiss chard, stems removed
Heat the oil in a large pot over medium heat. Stir in the onion and garlic, and saute 5 minutes, until onion is tender. Mix in quinoa, lentils, and mushrooms. Pour in the broth. Cover, and cook 20 minutes.

Chard with quinoa is awesome. That’s kind of what I made with ours. The chard was so good I’m going to want to eat it a million times. Goooo chard!
